Autumnal Spiced Apple Cake Recipe


As the weather in England begins to feel a lot more autumnal, I’m cracking out my favourite apple recipes. There’s something about an apple cake that, to me, feels quintessentially autumnal! This cake is no exception. It’s delicious by itself or with a healthy dose of custard. If you’re feeling inspired by the recent revival of the Great British Bake Off, this is an ideal recipe to get your feet wet! On the other hand, those of you lucky to still be enjoying the summer sun may want to wait a while before picking your apples!


4 medium free-range eggs
3 medium eating apples
200g unsalted butter, softened
150g Greek yogurt
225g Demerara sugar
2 tsp ground cinnamon
1 whole nutmeg, grated (can also use ground nutmeg)


1. Preheat the oven to 180*C, gas mark 4. Lightly grease your tin, I used a 20cm loose-bottomed cake tin.

2. Core and peel your apples. Slice them thinly and try to maintain their shape as much as possible as these will be on top of the cake!

3. Beat the butter and sugar together, adding the eggs one by one until the mixture is smooth. Folding in the flour if the mixture begins to curdle before adding it all gradually, mixing constantly. Then add the yogurt, cinnamon, and nutmeg. You could also add some smaller chunks of apple at this stage if you fancy.

4. Spoon the mixture into your baking tray. Taking the sliced apples, place them on top of the mixture. Sprinkle some more cinnamon with a little sugar on top to caramelise the apples in the oven.

5. Bake for around an hour; maybe longer as it’s quite a dense mixture so be sure to check it’s done throughout before removing from the oven. Remove, and allow it to cool before removing from your baking tray.

6. Serve on its own or with a dollop of cream or custard – and enjoy!
